Characters, Modes,Karts, and Parts can be unlocked by using Gold Trophies acquired in the Grand Prix mode allowing you to unlock 14 out of 30 unlockable characters. Other 16 characters are already available while karts and parts can be unlocked by collecting Coins.

As for the karts and part, many parts like Glider parts, Wheel parts, and customizable Body parts will unlock itself after every 50 coins earned. If you are playing with friends, the other player's coins are combined and unlock these parts faster. After 1000 coins mark is reached, the 50 coin interval will turn into 100 and parts will be unlocked after every 100 coins.
The Gold Kart, the hidden kart in Mario Kart 8, can be unlocked when earning Gold Trophy on every track.
